1. Corned beef: my hubs just cooked it in the oven.
2. Sautéed cabbage : sauté onions, then garlic in olive oil. Chop a whole head of green cabbage up and throw it in there. Throw in a bag of baby carrots. Salt and pepper. Let it simmer for 20-30 minutes until soft. It was delicious and full of fiber! Super low carb option.
3. Roasted potatoes and carrots :
Yellow potatoes, quartered. Carrots sliced. Drizzle in olive oil, salt, pepper, and fresh rosemary. Roast in wrapped foil on a cookie sheet at 350 degrees for 30-45 min or until the potatoes look toasted. Perfect leftovers for the week!
